CASHEW NUT COOKIES
Ingredients
250gm butter
160gm icing sugar
400gm plain flour
170gm ground cashew nuts
1 tsp baking powder
1 egg yolk
1 tsp vanilla extract
60 - 70pcs cashew cut into half for garnishing
1 egg yolk for egg wash
Method
Sieve the plain flour and baking powder together. Set aside.
In the mixing bowl, beat the butter and icing sugar together till creamy and light.
Add in the egg yolk and vanilla extract. Mix well and scrap the side.
Add in the plain flour and ground cashew nut. Mix till well combined to form into dough.
Roll the dough into ¼" (0.7cm) thickness and using your desired cookie cutter shape and cut out the cookie. Place the cookie in to prepare with greased proof paper baking pan.
Decorate each cookie with half cut cashew and brush with egg wash.
Bake at 170°C for 15 mins.
