KUIH KODOK (MASHED BANANA FRITTERS)
Ingredients
150g (net weight) ripe bananas (pisang emas)
½ tsp salt (or less)
1 tsp sugar
5 tbsp self-raising flour
1 tbsp rice flour
1 tbsp Quaker oats
A pinch of bicarbonate of soda
Method
Mash ripe bananas well with a fork and combine with salt, sugar,
self-raising flour, rice flour and oats. Sift in bicarbonate of soda. Mix until
well combined into a batter.Heat wok with enough oil over medium heat. Spoon a tablespoon of batter and drop into the hot oil. Constantly turn the fritters around until they are golden brown.
Remove with a slotted ladle and drain on several layers of absorbent kitchen paper. Serve immediately.

Mmmm.. i sukak chiak! But beh hiow fry, haha! And too scared to buy from stalls.. so can only drool from here ^^ you are so hardworking, mel! Wish we are neighbours ^^
ReplyDeleteThis recipe yield only small portion so you don't need a big frying pan to fry it. You can even use a small sauce pan to fry it. Easy...no oil splitter splatter on your beautiful hands...no worries at all. hehehe....

Mel, this is one of my favourite kuih! But so long already haven't eaten it. I can imagine the smell and the taste but wish that I can eat some right now!

ReplyDeleteThis is one of our beloved childhood snacks. My mother would always make this as we have banana trees growing in our garden, which gave us lots of fruits. I sometimes make this for my kids, but have never added in oats before, interesting ingredient. And a pot of tea is a must when I make this! Looks really yummy, thanks for the reminder, I have not made this for quite a while!
