Twice-Baked Potatoes

(Sigh!)...... Everything seem not right for me today.

Last week, went for check-up (blood/urine/stool/pap-smear) and the doctor called me today and said the result is out and briefly told me that my cholesterol is high!  Oh dear...... the first thing came to my mind is.... I can't bake anymore cakes in future?
Oil, butter, eggs, cream........all these are high in cholesterol!

While talking to my doctor on the phone, actually I was half way baking a cheesecake.  At after 45 minutes, my oven just suddenly turn off by itself.........duh......WHAT HAPPENED?!!!!   Try to turn on and turn off...... So fed up......  so you should know what the outcome of my cheesecake then... fed up!

Today I am posting, Twice-Baked Potatoes.  Potato, whichever way to cook it, it is still my favourite.  




Twice-Baked Potatoes

Ingredients
4 baking potatoes (Russet), about 225gm
150ml heavy cream
1 tbsp lemon juice
2 garlic cloves, chopped/mince
1 shallot, chopped/mince
85ml vegetable stock or water
3 tbsp chopped fresh basil (I used coriander)
2 tbsp grated parmesan cheese (I forgot about this here)
Salt and pepper to taste


Preheat oven to 190C.

Scrub the potatoes and prick the skins with fork.  Rub a little salt into the skins and place on a baking sheet.   
Bake / cook the potatoes for 1 hour or until the potatoes are cooked through and the skins crisp.

Remove the potatoes from the oven and cut them in half lengthways. 
Using a spoon, scoop the potato flesh into a mixing bowl, leaving a thin shell of potato inside the skins.  Mash the potato flesh with a fork.

Meanwhile, mix the cream and stock in a saucepan and simmer for 8-10 minutes or until reduced by half.  
Stir in lemon juice, garlic, shallot  and chopped coriander, season with salt and pepper.
Stir the mixture into the mashed potato.

Spoon the mixture back into the potato shells and sprinkle the cheese on top. 
Return the potatoes to the oven for 10 minutes or until the cheese has browned.
Serve with fresh salad.

  1. Mel, what a day, eh? Don't worry, just need to cut down on fatty food and eat more fruits and vege. You can still bake but eat in moderation. As for your oven, what happen? Breakdown kah? I love the potatoes! Will definitely try but not now. My problem is fat problem. Need to lose some weight first heh..heh..

      When we have addiction in baking and food, eventually health problem came and need to watch our diet.

  3. oh, mel.. don't feel too bad.. guess you have to cut down a little on all the "guilty pleasures".. but that doesn't mean you need to cut down your cooking or baking pleasures ^^.. just downsize the quantity you make and eat, that's all ^^. moderation or small/mini portions is key ^^. i really believe that ^^. hope you managed to fix your oven. i was thinking of baked potatoes with sour cream and bacon just as i dropped off to sleep last night ^^ just wishful thinking..

      I will try.....but sometime it is hard....when I go to bed I even think about food.... hee...heee....
      Actually I wanted to add some bacon into my baked potato, too bad I dont have in hand else it will be more delicious. Maybe I try next time with some sour cream too.

  5. Mel, I haven't done this check for a long time, aiyah, can't wait, must force myself to fast & dot he check. Love your twice baked potatoes. Potato is one of my most fav vegetables but these days, I only eat 1-2 slices, giving the rest to my family as I'm scare of putting on weights, hahaha!

      Yes it is advisable for women to do a check up once awhile. Sometimes when I had some stomach discomfort, I get paranoid.... you know lah, cancer this kind of thing they just come without any warning....kind of scary.
      When I stayed in overseas previous, I can't live without potatoes....... almost everyday we have potatoes.

  6. Hi Mel, your baked potatoes look so good and very appetizing.

    Don't worry too much of the cholesterol thingy unless it's over the extreme, practically everyone have it too. You can still cook and bake everything but eat in moderation. What we eat all go thru the liver for filtering device to remove any impurities and toxins. We actually only absorb 20% of what we eat, the rest go to waste.

    At night when we sleep the liver will do the filtering job. So what you need is actually detox your liver to prevent it from clogging.
    1/ For your size you need about 10 glasses of water daily. In between sip every 1/2 hourly. (coffee & tea not inclusive.)
    2/ 1/2 hour before your 3 meals drink 1 glass of water.
    3/ Fruits and fruits juices are to be taken half hour before meals or 2 hours after meals to prevent it from rotting in your stomach.
    4/ Possible drink green tea or Chinese tea daily at least a glass or two.
    5/ Take your dinner before 7.30pm latest by 8pm cos our organs stop working at 8pm. After 8pm to certain hours our organs will do the filtering and distribution job. Possible no meals 4 hours before sleeping time.

      Thank you so much for what you have commented here.....really I appreciate that. I know and realise that sometimes I don't drink enough water for a day but I will keep remind myself. I am more of English tea person than green tea or chinese tea but got to sip that once in a while to detoxic. But nowadays there are so many chemicals in the food that we consume but just doesn't want to get too paranoid what to eat and what not to eat. I will just go easy.
      Your info and tips does give a tinkle to me, really!

  8. Aiya... sorry to hear your cholesterol. I warn my husband about it too since he likes shrimp and all the high cholesterol stuff. He can finish a big bag of dried scallops like instantly! Baking is tough. I don't know how's my health is, but I can gain 3kg easily by eating baked goods (greedy?). Holiday is coming and I definitely need to watch out. But to me, it's not just baking.. potatoes too. I LOVE potatoes. My eyes got sparkles when I saw this post. I love this and can't wait to try.... =)
